Cupcakes 101

A couple weeks ago I shared my rose cupcakes and I got a lot of awesome feedback from y'all asking for a tutorial, so I thought I'd lump it into a Cupcakes 101 kind of thing. You know I like to share tutorials for first timers, like our DIY headboard, curtains, and other random craft projects. So this is for those of you who want to get more into baking or want to make prettier cupcakes!

I know it is much easier to buy frosting at the store but making your own frosting will step it up a notch if you're up for it. I fully support boxed cake mix though, especially when you're pressed for time. 

What you will need
  • Wilton Frosting Tips. I used the 2D and 1M tips the most so I recommend starting out with those two.
  • Disposable Pastry Bags. Filling the bag can get a little rogue, so don't bother with the reusable bags.
  • Large Scoop (Not pictured). Use a scoop for even batter distribution for your cupcakes.
  • Greaseproof Cupcake Liners (Not pictured). These aren't totally necessary, but they do look better after baking your cupcakes than standard liners.  



Start out with a good, pipable frosting. I like this basic vanilla buttercream frosting, but I've also made blueberry buttercream and vanilla-almond frosting.

The key is blending your butter long enough that the color lightens and it becomes fluffy (about 5 minutes). For most recipes you also need about 4 cups of confectioners sugar to get the right consistency for piping, so buy the big ass bag! I swear by my Kitchenaid Stand Mixer which helps making frosting much easier, but you could use a hand mixer too.

Preparing your pastry bag

You don't need to bother with a coupler, just cut the end of your pastry bag and and throw in the tip.

There are basically two easy ways to fill your pastry bag. The first is to put the bag, tip side down, into a cup and fold the bag over the edges of the cup before filling. I personally like to hold the tip in one hand and fold the piping bag over itself, towards my arm. 

Please excuse my manhand... I was in between manicures!

Once your bag is filled, try to eliminate any air pockets and twist the bag above the frosting.

Rose Cupcake Tutorial 


  1. Prepare your frosting in your pastry bag with the Wilton 2D, 1M, or 2C tip (I used the 1M above).
  2. Starting in the center, pipe just a little bit and stop. 
  3. Then in a circular, continuous motion, pipe the frosting around the center working toward the outside of the cupcake. Try to end on a downward angle so you don't notice where the icing ended. 
So easy! It does take a couple tries to get it right so that gives you an excuse to eat the ugly cupcakes!

And in case you're wondering why the heck I made blue roses.. it's because I also wanted to try this hydrangea cupcake tutorial. Here's how they came out!

I used the Wilton 2D nozzle for the hydrangeas.

The trickiest part of the hydrangea icing is getting the white frosting in the center of the blue frosting. Make sure to push some of the frosting out before working on your cupcake because the tip of mine was mostly just blue frosting at first. 


Whenever you screw up, just blend the frosting with your spatula and top with sprinkles!

Mother's Day Gift Guide

It's so hard to believe that Mother's Day is less than two weeks away! Where has the time gone? Also, Mom, if you're reading this please stop now!

I just got this gorgeous Lily and Val Mother's Day card and I'm so excited to send it! 
Today I've rounded up some pretty gifts for the multi-tasking Mommas out there who deserve to be spoiled. Let's face it, Moms deserve way more than these pretty things!

And if your Mom is anything like mine, she'd probably rather spend time with you at brunch or on a mani-pedi date. I don't get to spoil my Mom until my next trip North so I plan to grace her with my presence via Facetime. Not the same, but I'll take it!

Five on Friday

We made it to the weekend! I'm keeping it short and sweet this morning with my usual link up with Christina and crew for Five on Friday.


 ONE. Chocolate.


If you haven't heard of Sarris Chocolate, this is going to change your life. It's really famous chocolate (in the Pittsburgh area) and its so delicious I cannot keep my hands off of those Peanut Butter Meltaways. My mom sent us some for Easter... the meltaways also come in the form of a giant peanut butter-filled egg. Don't judge. The good news is you can order online!

Side note, anyone else still get an Easter basket (or box in my case) from your momma at age 28? Mom's are the best.

TWO. Herbs.


I love cooking with fresh herbs so I decided to try my hand at growing some in our back patio area this year. I'm not known for having a green thumb, so we'll see how this goes! I've got parsley, basil, cilantro, and rosemary. It smells so good!

THREE. Easter Sale. 


I don't have a lot of Easter decor for around the house so when I saw this felt wreath at Target I knew I had to get it on sale after the holiday. Sure enough, it was half off this week! Sad that it's going straight into storage but it will still be pretty next year!

FOUR. New Blog Header.

Anyone notice the new blog header? I thought it was time for a mini-blog facelift. I've got some other plans in the works so stay tuned!

FIVE. Weekend Plans.


Anyone have fun plans for the weekend? I think Ruby has the right idea (she gets her staples out this morning. Yay!) I plan on doing some of this in the gorgeous 88 degree weather we're supposed to have this weekend! I don't know about you but I'm really hoping to get something I can call a tan, my makeup doesn't match my face anymore...

Travel :: Venice

It's so hard to believe that a month has passed since our trip! It seems like yesterday we were riding around on a gondola and stuffing our faces with pasta. Venice was our second to last stop before venturing off to Paris for our actual one year anniversary.

Venice is one of those places that isn't quite as lively as Rome or Florence, but it's unlike any other city and you don't want to miss it. You can easily cover all of the sights in 1 day but we were glad to have a second day to relax and take our time exploring!

When we arrived at the train station in Venice we purchased a 24-hour vaporetto pass and hopped on the slow line for a 20 minute ride down the Grand Canal. We joked that Venice is to Italy what Sarasota is to Florida. Mostly an older crowd going about their business and trying to avoid the tourists who are packing into the vaporetto (water bus).

We stayed at Hotel Bel Sito, which is perfectly situated in walking distance to everything but also has a convenient vaporetto stop about 100 feet away. It was the perfect location and had tons of Venetian charm!



We upgraded for a 'superior' room with a view of the side canal. It was really large with a nice bathroom and was very... green. Even the walls even had green fabric on them but we loved how charming it was in the room. We got to hear the gondoliers singing as they came down the canal, it didn't even seem real!

The first day we headed to St. Mark's Square to see Doge's Palace, the Campanile, St. Mark's Basilica, and the Bridge of Sighs. I think at this point we were a little tired of touring things, so we didn't actually go inside any of the main sights. We ate lunch, took photos, and explored the area.


It was starting to get foggy at this point but this is one of my favorite photos!
Oh yeah... this was about the time I got pooped on by a damn pigeon (for the first time). Luckily it was only on my purse so it wasn't hard to clean. Steve was laughing like a hyena but I was just pissed at the birds and wanted to get away from all the idiots feeding them.

Instead of climbing the Campanile, we thought it would be more fun to ride the water bus to the San Giorgio Maggiore Church and see Venice from the bell tower across the canal. Unfortunately the fog rolled in so quickly that by the time we rode the water bus (roughly 5 minutes away) and made it to the top of the tower via an $8 elevator ride, we shouldn't see anything. ha! Figures!



Rain was in the forecast for the next day so we headed up the Canal to the Rialto Bridge, ate lunch, and did the obligatory gondola ride.



For lunch we ate at Trattoria alla Madonna where I had the best spaghetti bolognese ever!
 

I was hesitant about the gondola ride because it was about $95 but it was totally worth it, we would have regretted not doing it. Our gondolier told us some history and answered some of our questions while taking us up the Grand Canal and along some side canals.

We cracked up for most of the gondola ride because the gondola was leaning to the right (Steve's side) the entire time.


Dinner the first night was at Ristorante da Raffaele, which was pricey but romantic and was right next to our hotel. I ordered the gorgonzola gnocchi, which was the best gnocchi from the whole trip. And as you have seen, I had a lot of gnocchi!

The second day we explored the Rialto market area, picked up some souvenirs, and headed to the Peggy Guggenheim Museum to see some of my favorite Jackson Pollack paintings.

We walked around the Accademia Bridge the second night before heading to dinner and packing up for the last leg of our trip.


Our hotel had a water entrance on a side canal, which ended up being a huge advantage since we had to leave at 4 in the morning to get to the airport for our flight to Paris. The hotel arranged a private water taxi for us since the water buses weren't operating that early, and it made it much easier on us to get to the airport. The downside is it was about $120, so keep that in mind when you're booking 7 a.m. flights out of the Marco Polo airport!


The Marco Polo airport is small but Air France had the dumbest check-in machines that people couldn't operate so we were glad we got there early. Once we got on the plane I went over some of the French I learned in college and got my taste buds prepared for macarons, brie, and anything other than Italian food!

Easter Weekend Recap

Is it just me or does anyone else need another day off after this weekend?! I'm moving slow today so I'm just going to do a quick recap of our lazy weekend!


Unfortunately our weekend consisted of non-stop rain so our Easter picnic plans had to be cancelled. I decided to make my Mom's delicious brown sugar and pineapple ham for dinner and I have to say I'm pretty proud of how my first ham came out. We also had some white chocolate covered popcorn for dessert while watching half of House of Cards season 2.

 

Excuse the ugly red, black and blue colors. This is what happens when you're in yoga pants all day and have no one to impress with your table setting skills.

With Ruby still on the mend, we all tried to make up for the lack of sleep we've had over the past week. We have to be really careful that she doesn't lick her incision or sit on her leg wrong since her mobility is limited, so every time she moves in her crate both of us wake up and make sure she is okay. I can only imagine what it will be like when we have a kid!

The good news is she is getting better every day. The bad news is she knows we are hiding her medication in food manages to spit it out every.single.time. She also creepily stares at us at night, probably plotting against us for keeping her in the crate rather than on the bed at night. Spoiled!

It was so nice having nothing to do this past weekend, but I did miss our families and wish we had more energy to go out and about. Here's hoping this week goes by fast! I hope you all had a great Easter!

Friday Five

So happy it's Friday! Unfortunately I'm not one of those lucky people with today off from work, so I'll be that person staring at the clock every 10 minutes or so, wishing the day away until its acceptable to have a cocktail. Anyone else with me?!

ONE. Rose Cupcakes with Almond Frosting.


I've been craving anything lemon-flavored this Spring, so I decided to make lemon cupcakes this week. It's just a box mix, but I did put in the effort for some Almond Vanilla frosting. I've basically been eating these every day. I mean, who doesn't love cupcakes for breakfast?!

The icing recipe goes like this: 2 sticks of softened butter whipped for a few minutes, 4.5 cups powdered sugar added gradually, a tablespoon of vanilla extract, 1 teaspoon of almond extract (or a little less, almond flavor is strong). Whip for 5 minutes and pipe onto cupcake. Side note, do these look like roses? I tried.

TWO. Blooms.

My sweet husband brought home some of my favorite flowers this week! Here's hoping I can keep them alive for a few days!

THREE. Spring clothes.

Is anyone else obsessed with all the pretty spring clothes coming out? There are so many sales lately, I honestly can't help it if this shirt (and a few others) find their way into my shopping bag for purchase. Also, if J. Crew could just send on over all of their new arrivals (Factory items included), I'd greatly appreciate it. K, thanks!

FOUR. Brunch.

I mentioned this week that we'll be picnicking for Easter since we're so far from our families, but I'm also throwing in brunch plans tomorrow after seeing this Banana Bread French Toast recipe or maybe some french toast sticks. If you can't tell, french toast is my jam!

FIVE. Easter weekend.

Travel :: Florence

Happy Hump day! Today we get to pick Ruby up from the vet after her surgery! I'm both excited to have her back home with us but nervous about this whole recovery process. Eek!

Okay enough of my dog mom problems, today I'm sharing my favorite photos from our 2 days in beautiful Florence! I didn't expect to love Florence as much as I did, its so charming and everything is very walkable.

Our first stops after dropping off our bags was the Duomo, Baptistry (which was covered in scaffolding so I didn't bother taking a photo of the outside), and Giotto's Campanile (bell tower).  In true Steve fashion, we had to climb the bell tower. I got to the first level, which was pretty high, before I had enough and Steve ventured to the top without me.

We also saw the David statue at the Accademia the first day. Unfortunately no pictures were allowed but it was huge! The level of detail is amazing, you can see the veins in his hands! I recommend purchasing your tickets online (here) for both the Accademia and Uffizi Gallery. The line at the Uffizi was huge, even in the off-season, so you'll thank me later.

We walked over to the San Lorenzo market and perused the stands, where leather shop owners kept trying to sell Steve jackets that were "perfect for his broad shoulders." ha! We didn't buy anything but I enjoyed walking through there. We ate lunch nearby at Ristorante Osteria Pepo, it was quick and delicious.
 
After lunch we headed to Ponte Vecchio. Its basically all jewelry shops there now, but you have to walk through because its so charming!

We stopped at Gilli near the Piazza della Repubblica on our way back to the hotel for sweets. It was pricey but everything was so delicious! We got the "Cat Eye" cookies, at least that's what Steve thought was the translation, which you can see in the top left of the photo below. We also picked up a cannolli and some macarons. I would love to have all of those right about now!

We stayed at Hotel il Guelfo Bianco, which was just a couple blocks from the Cathedral. We had a huge room with a view of the Duomo and an extremely comfortable bed. The breakfast was okay, but I did love the fancy cappuccinos!


Our second day in Florence involved a ton of walking, but it was really fun exploring. Our first stop was the Uffizi Gallery, which had an amazing collection including some famous Botticelli, Titian, and Rembrandt pieces. We took a few photos at the Palazzo Vecchio afterwards and then headed to Piazzale Michelangelo.

 

It was a long trek but it was worth it for the views! On our way back down we stopped at Gusta Pizza, which is a must for the most delicious wood-fired pizza! It was easily the best pizza we had and we wished we had each gotten our own rather than sharing... yes, I'm aware that we are pigs.

To top it off we got some gelato from Grom, which is right next to the Cathedral.

For dinner our last night we headed back to the market area to eat at Trattoria Za Za. We sat inside because the outside tables were packed. The service was slow (I think that's a European thing) but the food was delicious and totally worth it. I'll give you one guess as to what I ordered...


Overall, Florence was a hit! We loved seeing the Cathedral and Duomo lit up at night on our walks back to the hotel. The next morning we headed back to the train station to catch our fast train to Venice! We used the new-ish Italo train company for this leg of the trip, and the "Prima" seats were really comfortable and worth the extra couple euros.
