Keep Calm and Eat a Cupcake.

Happy last day of July! I'm going all domestic on you again today but for good reason, because these cupcakes taste like summer in the form of a cupcake. And before I start getting all pumpkin-flavored this or that on you, I thought I'd throw my other favorite flavor combination at you.

Generally when I'm in the mood for a challenging cupcake recipe, I find something where I can add alcohol. For example, I successfully made Irish Car Bomb Cupcakes (recipe here)  last year and not only were they fantastic, but I had fun making a cupcake with filling. That is how I came up with this cupcake (the filling part, not the alcohol part... sorry to disappoint). I might add that I've always had great success baking when I'm simultaneously drinking a glass of vino. Just sayin.'

It may look like a lot of steps, but it actually is very easy especially if you can get your hands on a stand mixer. You'll also see that you probably have about 90% of the ingredients already.

I did not take a whole lot of pictures during the cupcake-making process because you will see that part is pretty basic.

Recipe adapted from Sally's Baking Addiction.

Cupcake Ingredients:
  • 1/2 cup (1 stick) Butter, softened to room temperature
  • 1 cup granulated Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 1/2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Milk
  • Zest and Juice from two medium Lemons (I only used a little zest and the juice came out to about 1/4 cup)

1. Preheat oven to 350 degrees. Line muffin tin with paper liners (You will probably end up with about 18 cupcakes) and set aside.

2. Using a handheld or stand mixer, beat the butter and sugar together on medium speed in a large bowl until creamed. I let my stand mixer go on the 6 setting for about 2 minutes. Slow mixer and add your eggs and vanilla extract. Beat on medium speed until combined, about 2 minutes.

3. In a medium-sized bowl, mix the flour, baking powder, and salt. Slowly add this dry mix to the butter mixture. I used my mixer for this on the 4 speed.

4. Add milk, lemon zest, and lemon juice to batter and mix until just combined.

5. Pour batter into cupcake liners making sure they are about 3/4 full. (I use this to get the same amount in each, plus it makes cookies really easy too). Bake for 20 minutes until slightly golden brown around the edges.

6. It is very important to place these on a rack and allow to cool completely before removing the center of the cupcake.

7. While your cupcakes cool, start making your buttercream frosting.

Buttercream Frosting Ingredients:
  • 1 cup (2 sticks) Butter, softened to room temperature
  • 3 1/2 cups Confectioners Sugar
  • 1/4 cup Heavy Cream
  • 1 1/2 teaspoons Vanilla Extract
  • Half package of Blueberries (see instructions below)
1. Beat softened butter on medium speed for about 3-4 minutes until very smooth and creamy.

2. Slow mixer and add powdered sugar, heavy cream, vanilla extract, and salt. Once it is mostly mixed in, turn mixer speed up a notch or two for about 3 minutes. You want the frosting you be very fluffy.

Note: If your frosting is too thin, add more powdered sugar. If too thick, add more heavy cream. Too sweet, add more salt.

3. Now, remove 3/4 of the frosting from your bowl and save for later. The remaining 1/4 will be used to make the blueberry filling. (If you don't do this, you will have to make a second batch of frosting like I did. Live and learn!)

4. Before we can add the blueberries to the buttercream frosting, we have to chop/grind them in a food processor. You can add all of the blueberries or just some, depending on how strong you want the flavor.

5. Then, add the blueberries to your frosting and mix until fully combined.

Look how pretty!
By now your cupcakes should be cool and you can start to remove the center. You can use a cupcake corer, like this one, or just take a 1/4 teaspoon measuring spoon and scoop out the center.

You will have a bowl that looks like this....

These you can either discard or eat (no judgement here, guess what this fatty did...)

6. The easiest way to fill the cupcakes, and frost them for that matter, is to put a decorating tip into the end of a pastry bag (using a coupler) and then stand the bag up in a glass before filling it your icing. Its much less messy this way!

7. Fill cupcake centers with blueberry buttercream. Then, fill another pastry bag with your plain buttercream and frost the top of the cupcakes. (I like using the Wilton 2D decorating tip, but I seemed to have lost it during our move and had to use a smaller one this time around)

Top with a small blueberry or sprinkles, then chow down and/or pass them off to coworkers like I do so I don't eat them all! :)

Anyone else loving the lemon + blueberry combo this summer? There are a lot of recipes on Pinterest that I've been meaning to try! Anyway, happy hump day ya'll. We're halfway there! Tomorrow is August which means I'll be turning up the Autumn talk. Get excited.

Master Bedroom Redo

I feel sad for our master bedroom. Its so... blah! There are two things keeping me from redoing it: One is the hubs thinks this mish-mash of colors and design (if you can even call it that) is acceptable and two- I'm extremely indecisive.

With the help of Pinterest, I'm slowly starting to narrow down some ideas to give our bedroom a light, romantic feel. I keep coming back to white duvet covers because all of the bedrooms I really like tend to have white bedding. Do these people have husbands pets? Bleach can only do so much, right? But, I digress...

I'm a little embarrassed to share these "before" photos, but maybe a little public humiliation will get the ball rolling. Keep in mind we're renting and we don't necessarily want to buy a bunch of furniture that may not fit or work in our next place. I've determined we need to get a headboard and we finally have a dresser that I'm going to redo (seen in yesterday's post here).

Look at all that space! We can do "SO many activities!" (Step Brothers, anyone?)

Now this part of the room is just... laughable. We purchased these two Ikea Rast dressers so I painted them antique white and switched out their hardware. But they are SO tiny! Hubs picked them up for me so I didn't see how small they were in person. I don't understand how any normal, human-sized clothes would fit in these! Not sure how long we'll be keeping them around....

Also, just so you know, I'm aware that our 16x20 canvas looks ridiculous by itself on that wall. I'm thinking of doing a small gallery wall with more photos and art because that just isn't cutting it.

My plan for the current brownish-black Ikea furniture is to paint it white and I'm hoping to find a cute vanity or desk I can use with the chair I showed you here. The lamps will be replaced with mercury glass lamps like the one I told you about here.

When all is said and done, I hope our bedroom looks something like the inspiration below. I'm borrowing heavily from Suburbs Mama's master seen here. Unfortunately her Z Gallerie bed costs more than my entire budget for the master bedroom, so there's that.

Headboard: I think I'll probably start with purchasing the headboard and then pick out the pillow fabrics once I see the headboard color in person. I really love wingback tufted headboards and this is the cheapest I can find. It has decent reviews and I'm hoping Joss and Main will have a Skyline Furniture sale again soon so I can maybe get it for less. I contemplated a DIY headboard but I don't know if I'm up for that challenge right now.

Wall Color: I don't want to repaint our bedroom since we're renting so this is my best guess at the color that is currently on the walls. This swatch is Palladian Blue by Benjamin Moore.

Ikea Hemmes Nightstand: We already have two of these so I'll probably paint them and change the hardware. If not, I may move the Ikea Rast dressers over to serve as nightstands.

Bedding: I like this Pottery Barn duvet set in Porcelain Blue and this coverlet is similar to what I already have.

Monogram Pillow: Definitely adding a monogram throw pillow like this one. The interlocking monogram reminds me of our wedding invitations :)

Other Pillows: I love the two patterns (left and right) above but I also found a bunch more on Etsy that might work so this is probably my biggest issue. I think I'll wait until the headboard is delivered so I can compare my fabric swatches.

Lamp: As you know I already found one mercury glass lamp with a light grey lamp shade. World Market has a similar lamp bases here and Target has a similar shade here.

So what do you think? Do I need more pattern? Too boring? Has anyone done a DIY headboard? I'm too intimidated to try one right now, the hubs and I have pathetic construction skills!

Another Weekend in the Books

Happy Monday!!I hope you all had a great weekend! Welcome to those of you who found my blog through the link-up on Friday, so glad to have you :)

You may have noticed on my Instagram that the hubs and I snagged an adorable brown and blue antique dresser this weekend during our garage sale hopping. Although I want to do our bedroom in white furniture, this one is so.darn.cute that its making me rethink my entire master bedroom revamp just so I can keep the color combo!!

Our master bedroom is looking pretty drab right now, not to mention we need more clothing storage space, so we've been on the hunt for a dresser and I had very specific requirements. I wanted: antique look with curves and fancy legs, something large with a lot of drawer space, a dresser in good shape with no wobbling or broken drawers (wouldn't be a big deal to some, but I suck at fixing that sort of thing. I can only fix aesthetics like paint). This one was all of that!

The back story: so we went to a few garage sales and this house was the last one we were going to. The owner had other gorgeous pieces of furniture but this one was sitting in the garage with all the drawers out and only one coat of paint. (Hence why all of the hardware is removed). I asked the owner if she would be willing to sell it without finishing it, since I would have to paint it white anyway and this would save us both some trouble. She said ok and asked for $250. Now, being the terrible negotiator that I am, I agreed rather than trying to get her down a little.

I'll give the pro garage sale shoppers a minute to pick their jaws up off the floor....

I know that seems ridiculous, and I'm sort of kicking myself for not trying to save at least another 25 bucks BUT.... the nice people offered to deliver this huge piece of furniture to our house down the street rather than us trying to figure out how to transport it home in our little car. That in itself was a major bonus.

Anyway, I'm stoked and can't wait to get working on this! It will be my first Annie Sloan Chalk Paint endeavor. I'm thinking of painting it Old White and possibly keeping the wood stain on the top. It would probably look something like this. What do you think?!

The hubs and I also had a date night in Charleston this weekend. We went to TBonz (hub's pick, it was alright) and then to Kaminsky's for dessert. However, there was a wait list to sit and have dessert and a dessert martini (how ridic is that?!) so we just got blueberry cheesecake to-go and it was still fabulous. Then we walked about the Battery and explored some of the back alleyways.

That 5-story 1846 mansion, with a carriage house, can be yours for only $5.5 mil!

The rest of our weekend was spent getting me some new glasses (I'm not into selfies but you might see a glimpse of these eventually), taking Ruby to the dog park, Skyping with my family, baking (Lemon Cupcake with Blueberry filling recipe coming this week!), drinking wine, and relaxing. It was perfection. :) I hope yours was too!

Five on Friday- my first link up!

So I'm trying this link-up for the first time, which I have no idea if I'm doing right, but here goes! (Edit: I put the link to my About me page on accident and I don't know how to change it.. what a dummy! haha. #newbloggerproblems) If you're a new visitor to the blog, welcome! You can read more about me (and the blog) here. I hope you enjoy and can stick around!

I can hardly contain myself from all of the excitement that its Friday!! This has been a long week and I can't wait to put my feet up be productive this weekend. We have a lot to do this weekend but as long as I'm not sitting at my desk (and have a cold, alcoholic drink in my hand) I'll be happy :)

Some of my favorites from this week...

-ONE-
Nordstrom Anniversary Sale! Woo! I scored these Zella Live-In Leggings for almost $20 off. They are so comfortable... they actually sort of  feel like a wetsuit. They would be great for working out but I think I'll probably just wear them with sweaters and boots this Fall! I've also had my eye on these boots... maybe they'll be a weekend purchase.

{via}

-TWO-
Loving my first week of working out with my new kicks, seen here in my Workout Essentials post. There is something about new shoes, I feel like a runner (even though I'm clearly NOT). I'm sure this high will go away by Monday's workout.

-THREE-
Yesterday I was feeling a little under the weather. So instead of resting on the couch, I did the next best thing. I went to Target. And TJ Maxx. It was one of those nights where both stores had SO much cool stuff! Here is my haul.. I could have bought more but the hubs was hovering. ha!

All of these will be heading to our master bedroom, except for the basket (buy it here, it was $24 in the store) which will go by our fireplace. The candle holder is a little shiny, so I'll probably spray paint it and put it on my nonexistent vanity desk. The shower curtain will probably turn into pillows. I also need to hit up another TJ Maxx for a matching lamp, but overall I was excited!

Ruby photobomb.

I'm planning to redo our master bedroom (see my inspiration here) so check back next week for the before photos and a house tour!

-FOUR-
Date Night!! The hubs and I are going to make a night of it and go downtown for dinner, then I want to try out Kaminsky's for some dessert + dessert drinks! We love exploring the area and haven't gone downtown since we had friends here a few weeks ago. The photo below is from the Farmers Market a few weeks ago... so charming!

-FIVE-
I love these two. So. much. and I love our weekends together :)

I hope you all have a great weekend, check back next week for a new recipe and my first projects around the house!

Workout Essentials

Happy Hump Day! Its been a slow week so far in this household, we've had to force ourselves to get to the gym let alone do anything else productive after work! I mentioned earlier this week that I'm trying to get back to my workouts after a ummm... 4 month... hiatus. I've gone here and there, but I haven't made it a habit like I did before the wedding.

I usually like making up my own workouts but I came across the Lee Labrada Lean Body Trainer, and maybe its because deep down I'm just that lazy, I decided to try his plan rather than make up my own workouts. It's a 12 week plan so I'll keep you updated on how it goes.

I decided to put together some of my favorite workout items that help me have a good workout.

1. Under Armour UA Tech Short Sleeve V-Neck- I found these at the outlet for $10-12 and have them in 4 colors, including 2 neon colors (woo!). They are longer than most of the women's dri-fit shirts and are so comfortable.

2. Nike Air Pegasus +30- I just got these in the mail and love them, especially the "atomic pink" color! FYI- They run about a half size small so size up. They have a lot of support in the heel and the arch. You can get these from Finish Line with a promo code for cheaper than Nike offers them.

3. Nike Dri-Fit Running Capris- I also find these at the outlet for about $30. They have different color strips on the side of the thigh, so I've got 3 different pairs. They are so lightweight and comfortable, I don't think I'll ever go back to shorts for workouts.

4. iPhone Holster- I like to keep a list of my exercises in the Notes app so I use my phone to listen to music when I workout. This clip stays in place even when I'm running like a buffoon, and allows me to remove the phone easily so I can see my workouts or change the song. Plus the arm bands annoy the shit out of me so this was kind of my only other option.

5. Tervis Water Bottle Tumbler- If you haven't heard of Tervis tumblers, go get one now! They are great for hot or cold drinks, they don't sweat, and this particular one comes with a lid. I attach my locker key to the top of this so I don't lose it at the gym. I've also dropped it multiple times and it hasn't even chipped. (Plus, they are dishwasher safe and made in the USA)

I am trying to revamp my cardio playlist because lets face it, I find running intensely boring, and I need something besides new kicks and sweet pants to keep me going. I tend to like alternative when it comes to working out so here is my current playlist, its a work in progress.

Warmup
Red Hands by Walk Off the Earth
Be Your Man by Ivan & Alyosha

Intervals/Workout
Rubbernecking by the Big Pink
Anything Can Happen by Ellie Goulding (random, reminds me of the New Girl.. anyone?)
Drunk in the Woods by Walk the Moon
Closer by Tegan and Sara
The John Mayne by Little Green Cars
Darling, It's Alright by Francis & the Lights (Have you seen the video for this? love his dance moves)
I Love It by Icona Pop
Sex by the 1975
Free by Graffiti6

Cool Down
Ho Hey by the Lumineers (Reminds me of our wedding- we played it during the cake cutting)
She Got the Honey (iTunes sesh) by Mat Kearney

Anyone have any other favorites for their workouts? Any songs that really get you moving?? Wish me luck on tonight's workout... its a leg night. Ugh!

Wedding: Reception

Finally, the party! Our reception was held in a hotel ballroom, which I have to admit I was hesitant about because I really wanted something with a lot of character that would go with the vintage-inspired decor. Those types of venues are very difficult though when you're planning out of town because you often have to organize your own vendors for catering, linens, furniture, etc. In the end, everything was beautiful and it turned out exactly how we had planned!

I chose to make one menu for display on the escort card table using the monogram from our invitations. The escort cards and other reception signs were DIY projects which I printed on "felt" cardstock. I absolutely loved our guestbook table which included photos of our parents and grandparents on their wedding day, plus a funny photo of Steve and I as kids.

For our card box, we used a gold bird cage with a strip of alencon lace around the bottom and hydrangeas repurposed from the church pews.

Our centerpieces, which were a mixture of high and low arrangements, included pink hydrangeas and dusty miller.

For the table numbers, we used baroque-style frames which were sprayed antique gold and then covered with wood stain to get the darker color in the ridges. My mom and I then attached scrapbook paper and lace to the glass. I tried forever to find wooden numbers, and finally ended up using an Etsy vendor which worked out great. We stained the numbers and used hot glue to attach them to the lace-covered glass.

Our cake was not only gorgeous, but it also tasted amazing. We are so excited to eat the anniversary cake!! Our vendor mimicked our monogram from the invitations and added a pearly sheen to the icing. My only beef was that the monogram looked a tad crooked, but I know 99% of the guests didn't even notice. We went with white cake and strawberry mousse filling. I purchased the gold cake plateau to match the gold theme and I think it helped make the cake stand out in the large ballroom.

If you are from Pittsburgh or have ever been to a Pittsburgh wedding, you are probably familiar with the cookie table. Members of both families chip in to help bake all types of cookies, like lady locks, buckeyes, pizzelles, Georgia Peach cookies, and other more common favorites like chocolate chip and peanut butter. We had over 1,000 cookies. Probably closer to 1,200 but we sort of lost track when so many of our amazing family members pitched in and made extras. We used the cookie table as our favors and included to-go bags so guests could take some for the road. We had about 2 or 3 bags left, and only one tray of cookies at the end of the night, so I'd say it was a hit! The Florida Gator cake topper was made by my incredibly talented Maid of Honor!

Our first dance was Into the Mystic by Van Morrison. We debated for months on this (okay, I was indecisive and Steve was agreeing to anything just to move on... ha!) but in the end, this was one of our favorite songs and it was the perfect pace for a slow (but not boring) first dance.

I mentioned before that there were some funny moments throughout the day.... Cake cutting was one of them. They didn't provide a little plate for us once we sliced the cake so after cutting a way-too-thin piece, it fell on the table! ha! Steve gracefully fed it to me but I wasn't quite as nice...

After dinner and the cake cutting, we did parent dances. Steve danced with his mom to In My Life by the Beatles and my dad and I danced to a cover of The Way You Look Tonight by Maroon 5.

We have a ton of dancing photos, but these are some of my favorites! Our DJ was so good, he kept guests from every age group on the dance floor all night. We ended up extending the bar twice and by the last song, we still had SO many friends and family dancing with us and singing Piano Man! :)

End of Summer Bucket List

We had another productive weekend here, though nothing too exciting. Saturday we woke up at 6:30 AM... eeks... to check out a few garage sales. We're on the hunt for a dresser I can redo for our master bedroom but we only saw one and it needed a lot of TLC. (Plus the guy wouldn't come down from $75 for it. What the?) So then we took Ruby to the farmer's market with us. We came home with lots of veggies and some dog treats for Ruby.

While hubby did yard work, I finally finished painting the Ikea Rast dressers we purchased a while back for our master bedroom. They were smaller than I thought, so I'm not sure how long they will work for us, but at least its something. I'm thinking of switching the clear knobs for mercury glass knobs from Hobby Lobby. What do you think?

I plan on doing a house tour once I get this place cleaned up a bit, so more on that soon!

We also started planning our ITALY and PARIS trip for our one year anniversary!! YAY! Neither of us have ever been to Europe, and we wanted to do this trip as our honeymoon but it didn't work out, so we're beyond excited! We're going to plan everything on our own, with the help of Rick Steves' books, the internet, and friends who have been there before. Because I'm an over-planner, I've already made a binder to start organizing things. Steve, on the other hand, immediately busted out Excel and started typing in formulas and all sorts of things that confuse the hell out of me.

Clearly I'm old school with my printouts.... ha! Design for binder here.

As Steve and I were relaxing Sunday night, we started talking about things we want to do this summer, before the weather starts getting cooler. Being the perpetual list-maker that I am, I felt compelled to write a bucket list of things we want to do before the end of summer. So here goes...

End of Summer Bucket List

Try out 3 new restaurants in downtown Charleston
Steve and I love trying out new restaurants and there are so many to choose from downtown, I hope we make time to explore a little more.

Go to the beach
So far we've been to Folly Beach but I'd like to go check out other beaches in the area, and work on improving my pathetic tan.

Rent a kayak or paddleboard for a day
As a secondary goal, I'd like to remind myself not to fall or get hurt doing said activities.

Visit with family
Whether its driving to see family, or having them as visitors, I really hope to get some family time in. It gets lonely here without a girlfriends or family members close-by.

Teach Ruby a new trick
I'm not sure which trick just yet, I'll keep you posted.

Get a hair cut and color
A few things about my hair: a) no one ever notices when I get it cut and b) I've had way too many bad haircuts so I'm terrified every time I have to find a new hairstylist. I've been growing it out for a year and a half, and because its curly, its hard to tell for anyone but me. Let's just say... it needs help.

Get serious about working out
Or maybe I should say make it past week 1 of Lee Labrada's lean body trainer?? Between eating like Steve (pizza + carbs basically every day of the week), being burnt out after the wedding, and the exhaustion from moving, I've been too lazy to get myself to the gym. I also got back into baking so that is not. helping.

Make more crock pot and healthy, balanced meals
Since we've been in our house and have our own grill, I've been eating more protein and grilled veggies for dinner. Lunch is where I struggle though. If I don't have leftovers, I don't put any effort into my lunch and end up with carbs. carbs. and more carbs.

Visit Firefly Vodka Distillery and Irvin House Vineyards
In DC, we loved getting away from the city and visiting wineries. Even if we end up pushing this back until the fall, I definitely want to try them out!

Keep in touch with friends
Between the craziness of the wedding, moving right after, and trying to get settled, its been hard for me to keep in touch with my girlfriends. Its so hard meeting friends when you're out of college and work from home, so I hope I can find time to chat with them more often!

Buy a maxi dress
Why is it so hard to find a damn maxi dress that is cute and around $50?!?! I've looked all summer, maybe I need to up my budget but I'm determined to find one.

Run a 5K
There will be a lot more 5K events at the end of summer and early fall, so the hubs and I are hoping to find something that involves raising money for a good cause. A free t-shirt also helps...

Go golfing with Steve
So this one is a stretch, but the hubs loves to golf and I was thinking it might be time for me to stop being terrified of golf courses and do something that he really enjoys. True story- About 8 years ago (before Steve), I was meeting a guy for a date at a driving range. I got there early and decided to hit a few balls so I didn't look like an ass when he got there. Well... I shanked a ball into the little divider and it came back and hit me above the eye. 7 stitches, lots of blood, and a mild concussion later, I swore off golf and didn't touch a club until a few weeks ago.

Anyone else have big plans for the rest of summer? Any trips planned? Or if you've been to Italy or Paris and have any recommendations, send them my way :)

Wedding: Wedding Party

I have to admit, I was a little nervous about how our wedding party photos would come out because A) it was like, 40 degrees and B) I thought the dead winter trees would look ugly in the background. When we got these from our photographer, Steve and I were SO happy!! To my bridesmaids credit, none of them showed how cold they were and we had such a great time taking all of these. I have pretty much all of these photos posted up somewhere in our house!

I didn't want my bridesmaids to look too "matchy matchy" so I let them choose the Bill Levkoff chiffon dresses in whichever style they liked best. No one picked the same dress and they all looked SO beautiful!! I mean seriously, they are in 40 degree weather with wind and they look perfect! For shoes, I asked them to wear any nude pumps they liked because I just wanted them to be comfortable.

The guys wore Calvin Klein tuxes from Men's Warehouse with the off-white shirt, bow tie, and suspenders. Steve wore the Vera Wang tux instead because he likes the slender fit and you really can't tell the difference in photos. I do have to note that when he picked up his tux, none of it fit. At this point, I was too busy to even panic so he took care of everything and MW shipped the right size overnight. Whew!

So handsome!! How amazing is this photo!?

Then came one of my favorite wedding photos ever... I specifically requested this pose with our photographer after seeing it here. I think our photo knocks the pants off the original, but that's just my opinion :)

I was so terrified Steve was going to drop me but he did good!
My bouquet included peonies, roses, and dusty miller. It was exactly the pastel, romantic look that I was going for! I love hydrangeas though, so I opted to use those for the bridesmaid's bouquets and the flower girl mini bouquets. You will also see them in the reception photos later!

Note to future brides: I recommend taking this photo before you walk all over a park and remember to pick up all 1424 layers of your dress :)

Love :)
